At Que Rico, one of our guiding principles is blending the rich traditions of Latin American cuisine with global influences to create dishes that are both familiar and excitingly new. One such dish that perfectly embodies this philosophy is our Cuban Beans and Rice with New Mexico Green Chili. This blog takes you behind the scenes to explore how we crafted this fusion masterpiece, bringing together the comforting flavors of Cuban cuisine with the bold, smoky heat of New Mexican green chili.

The Inspiration: Marrying Tradition with Innovation

Cuban Beans and Rice, or “Arroz con Frijoles,” is a classic dish that holds a special place in the heart of Cuban culture. It’s a humble, hearty meal, rich in flavor and steeped in tradition. When we set out to create our version at Que Rico, we knew we wanted to honor its roots while also adding a unique twist that would resonate with our diverse Las Vegas audience.

Enter the New Mexican Hatch green chili—a regional ingredient known for its distinct, slightly smoky heat. By incorporating this into the traditional Cuban recipe, we aimed to create a fusion that would not only complement the rich, earthy flavors of the beans and rice but also introduce a new, vibrant layer of taste that elevates the dish.

The Ingredients: A Blend of the Familiar and the Bold

Creating this dish starts with sourcing the best ingredients. For the base, we use long-grain white rice and black beans, staples of Cuban cuisine that provide the dish with its hearty, comforting foundation. The beans are cooked slowly, allowing them to absorb the flavors of garlic, onions, bell peppers, and a hint of cumin, creating a savory and aromatic profile.

The twist comes with the addition of New Mexican Hatch green chili, which we roast to bring out its smoky, slightly sweet notes. These chilis are then finely chopped and added to the beans, infusing them with a gentle heat that lingers on the palate without overwhelming the dish’s original flavors. The combination of the earthy beans, fluffy rice, and the bright kick of the green chili creates a harmony of flavors that’s both unexpected and delicious.

The Process: Perfecting the Fusion

Balancing the flavors of Cuban cuisine with the boldness of New Mexican chilis was key to perfecting this dish. In the kitchen, our chefs experimented with various cooking techniques and ingredient ratios to ensure that the green chili enhanced, rather than overpowered, the traditional Cuban elements.

The beans are prepared in a sofrito base—a blend of sautéed onions, garlic, and bell peppers—that lays the groundwork for a deep, flavorful dish. The green chili is introduced gradually, allowing us to fine-tune the level of heat and smokiness until it perfectly complements the dish’s other components.

Finally, the dish is brought together with the rice, which is cooked separately to maintain its fluffy texture. Once the beans and chili mixture is ready, it’s spooned generously over the rice, creating a dish that’s both visually appealing and rich in flavor.

The Result: A Fusion Dish That Tells a Story

Our Cuban Beans and Rice with New Mexico Green Chili is more than just a meal—it’s a story of culinary exploration where tradition meets innovation. The dish pays homage to the rich heritage of Cuban cuisine while introducing a new, exciting element that reflects the diverse, dynamic spirit of Que Rico.

We’re proud of the result—a dish that’s comforting and familiar, yet bold and adventurous. It’s a perfect example of how we at Que Rico strive to push the boundaries of Latin American cuisine, bringing you flavors that are as unique as they are delicious.
